    4 chicken breast halves, 2 tbsps canola oil, one lemon, one sweet pepper, 1/2 cup fresh snow peas stil in pod, 1/2 onion, 1 tbsp honey, 2 tsps honey mustard, one clove garlic, 1 cup carrots, salt and pepper to taste


cut four chicken breast halves into small pieces, pour 2 tbsps of canola oil in skillet or walk, add chicken to simmer add salt and pepper, add in onion and garlic, once chicken is browned add in carrots ( I use baby carrots sliced in half) add in honey and honey mustard. Slice peppers and trim snow peas. Once chicken is cooked through add in peppers and peas. Cook until vegetables are tender yet still have a bit of bite. Zest one lemon, add in zest and juice of same lemon. Add in chow mein noodles and toss. cook for a few more minutes until noodles are done. Don't add lemon juice or zest too early as it can turn bitter if cooked too long. Check salt and pepper levels and season again if necessary.
