Introduction
This is the greatest recipe for a quick meal or snack! I haven't met anyone yet who didn't like it (except my extremely picky 7 yr old!). Perfect for breakfast, brunch, Potlucks, or anytime! Ingredients
-
1 dozen large eggs
1 pound sausage (I like pork best), crumbled and cooked
4-6 strips of bacon, cooked and crumbled
1 c. chopped onion
6 oz. shredded cheddar cheese (I like sharp)
1/4 c. milk, skim
1 c. mushroom pcs, optional
**You can add more or less of any of the ingredients, depending on what you like**
Directions
Prepare and combine all ingredients in a large bowl.
Using mixer, mix together til well blended and eggs are just a lil fluffy.
Grease bottom of 9x13-inch casserole dish (I like to use a cooking spray)
Pour all ingredients into prepared dish.
Bake at 350 degrees for approx. 30 minutes, until edges are browning and bubbly.
**The best test of doneness is when you move the pan, does the middle wiggle? If so, cook a lil longer!** :)
This recipe makes 12 servings.
Enjoy!!

This is great! I used frozen sausage and bacon bits (the kind used for pizza toppings). Because they were still frozen, it needed about 10 minutes longer. The mixer was going to be too loud early in the morning, so I just whisked the eggs very hard and then stirred in remaining ingredients. - 1/1/12
