Introduction

This salad is best made when lentils are still warm. A very healthy source of fibre and protein. This salad is best made when lentils are still warm. A very healthy source of fibre and protein.
Number of Servings: 2

Ingredients

    1 cup of cooked lentils
    2 medium sized tomatoes chopped
    2 medium celery stalks chopped
    1 tsp of fresh chives
    1.5 tbsp of Extra Virgin Olive Oil
    1 tbsp of Balsamic Vinegar
    2 dash of sea salt
    2 dash of freash ground black peper

Directions

1. Cook 1/2 cup of dried lentils according to package directions (approx 30-40min.).

2. Chop in pieces celery and tomato and put in bowl.

3. When lentils are cooked, place 1 cup with tomato and celery.

4. Add chopped chives, extra virgin olive oil, balsamic vinegar, sea salt and freshly ground black pepper. Mix lightly together and serve.

    I like lentils salad a lot... Thanks for sharing... I add a little bit of fresh cilantro and grounded coriander... I serve 4 (as a side dish! with ommelette) ;-) - 12/10/10
