Ingredients

    1-8.5 ounce canned pineapple slices
    3 tbl butter
    1/2 c brown sugar
    4 maraschino cherries
    1/3 cup shortening
    1/2 cup gran sugar
    1 egg
    1 tsp vanilla
    1 c all purpose flour
    1 1/4 tsp baking powder
    1/4 tsp salt

Directions

Drain pineapple reserving syrup. melt butter in 8x8x2 inch pan. Add brown sugar & 1 tbls of reserved pineapple syrup. Add water to remaining syrup to make 1/2 cup. Arrange pineapple slices in bottom of pan. Place cherry half in center of each slice.
Cream together shortening & sugar till light. Add egg & vanilla, beat till fluffy. Sift together dry ingred. add alternately with the 1/2 cup reserved pineapple syrup, beating after each addition. Spread over pineapple. Bake at 350 degrees for 40 to 45 min. Cool 5 min; invert on plate. Serve warm.

    This recipe is very easy to make and is DELICIOUS. My son thought that it tasted like cheese cake and my Hubby said that he really enjoyed it. He said that he LOVES pineapple ! (I didn't know this.) I will definitely make this again and again! Thanks, SP. - 11/2/16

    Incredible!
    Easy prep, I didn't have baking powder so subtituted baking soda 1/2 teasp.to 1 cup flour and the results were fine. - 5/6/14
