Number of Servings: 20

Ingredients

    2 Tbs Olive Oil
    2 cups Carrots
    2 cups Onions
    2 cups Celery
    2 cups Bell Peppers (any color)
    2 cups Asparagus
    2 cups Green Beans, frozen
    2 cups zuchini
    32 oz Salsa, fresh or deli style
    16 to 24 oz Beef Broth, fat free & reduced soduim
    3 cloves Garlic
    3 Bay Leaves
    Italian Seasonings to taste

Directions

Heat a large pot on medium heat for a couple minutes.
Add the olive oil, allow to heat up a couple minutes.
Cut all veggies into bite size chunks.
Add carrots, stir occassionally.
Wait 10 minutes then add each of the veggies one by one in the order shown.
Add the the rest of the ingredients
Simmer for 30 minutes or until the carrots done.
