Ingredients

0.5 Can Tomato Paste
1 Can Diced Tomatoes
0.5 Cup Fat Free Half & Half
0.5 Large Onion (Chopped)
4 cups Fresh Spinach
1.5 Tbsp Olive Oil
3 Tbsp White Wine
3 oz Sundried Tomatoes
3.75 Cups Tortelloni (uncooked)
Garlic, Crushed Red Pepper and Italian Seasonings to Taste
Directions
Start water to boil to cook the pasta. Cook tortelloni to desired doneness, keep warm after draining.
Add garlic, onions, oil, wine and seasonings to a saute pan. Start to saute everything in there, then add everything else except for pasta. Cover and allow to cook on medium heat for at least 15 minutes, then uncover to allow sauce to thicken up, while turning off the heat.
Dish out the pasta on individual plates, top with the pink veggie sauce.
Makes 6 evenly divided portions.
