Introduction
These large muffins are great to start your day. Great taste of carrots with wonderful flavours of apple, raisins, coconut, walnuts and cinnamon. Most of the fat has been taken out and replaced with yogurt and mashed ripe bananas. These large muffins are great to start your day. Ingredients

1 cup white flour
1 cup whole wheat flour
1/4 cup packed brown sugar
2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
2 cups shredded carrots
1/2 cup raisins
1/2 cup flaked coconut
1 apple, peeled, cored and shredded
3 eggs
1/4 cup oil
2 tsp vanilla extract
1 cup low fat vanilla yogurt (or unsweetened applesauce)
1 cup mashed bananas
1/4 cup walnuts or sunflower seeds (sprinkle on top)
Directions
Preheat oven to 350 degrees F. Grease 12 muffin cups or line with muffin liners.
In a large bowl, mix together flours, sugar, baking soda, cinnamon, nutmeg and salt. Stir in the carrot, raisins, coconut and apple. In separate bowl, beat together eggs, oil, vanilla, yogurt and mashed bananas. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups. Top with chopped walnuts if desired.
Bake in preheated oven for 20 to 30 mins, until a toothpick inserted in center of muffin comes out clean. Makes 12 large muffins.
