Introduction

Here is a cookie that is awesome... no shortening or butter!! It is a much healthier alternative!! You can make it even healthier with 100% whole wheat flour and a egg alternative!! I hope you enjoy! Ingredients

    2 c. sugar
    2 c. brown sugar
    1 1/2 c. canola oil
    4 eggs
    2 t. vanilla
    2 c. flour, white unbleached
    2 c. flour, whole wheat
    1 t. salt
    2 t. baking soda
    4 c. rice krispie cereal
    1 1/2 c. quick oatmeal
    3 T. flax seeds

Directions

Beat sugars and oil, add eggs and vanilla. In a separate bowl mix flour, salt, and baking soda. Slowly add to sugar and oil mixture. Gently add in rice Krispies, flax, and oatmeal. Grease cookie sheets, make 1 inch diameter balls, place 2 inches apart. Bake at 350 for 8 minutes each batch. Makes approximately 90 cookies. Cool and enjoy!!

    Incredible!
    Used only whole wheat flour, instead of 1/2 white, unbleached and 1/2 whole wheat. Did NOT try Egg Substitute yet. Cookies taste too good to be healthy! Love the extra crunch the rice krispies add! Husband gave them delicious rating! - 3/4/11
