Ingredients

    10-12 Lasagna noodles - cooked
    1 lb. ground turkey - cooked and drained
    1 large onion, chopped
    1/2 bell pepper, chopped
    1 jar spaghetti sauce
    1 8oz. can mushrooms - drained
    2 cups fat free cottage cheese - creamed
    1 pkg (10oz.) frozen spinach (thawed) well drained
    1/4 cup parmesan
    1 cup fat free mozzarella - shredded
    1 tsp. salt
    1/4 tsp. pepper
    2 garlic cloves or the equivelant in minced or powdered.
    Italian Seasoning to taste


Directions

Preheat oven to 350 to 375

cook lasagna as per directions on pkg. Drain, cover with cold water - set aside.
cook and stir turkey with onion and pepper til done. Drain. Stir in spaghetti sauce and mushrooms. Add spices. Heat to boiling. Pour 1/2 of this mixture into 9 x 13 baking dish.
Mix cottage cheese, spinach, and cheeses together.
Put 3 tbsp. down the center of a noodle. Roll the noodle up and cut in half. Place the cut side down in the sauce in the baking dish.
Spoon the rest of the meat sauce over the top of the rolls.
Cover with foil and place in oven for 30 to 35 minutes. Until hot and bubbly.
