Number of Servings: 12

Ingredients

    4 c. vital wheat gluten flour
    1/2 c. nutritional yeast (+ some extra for fun!)
    4 T. flour
    2 c. cold water
    1 c. Bragg’s liquid aminos
    2 T. olive oil
    Flavorings of choice to taste, suggestions include: onion powder, Mrs. Dash, fresh minced garlic, tomato paste, Marmite, or fresh chopped parsley
    6 c. Vegetable Broth

    Breading:
    Bowl One:
    2 c. Flour

    Bowl Two:
    6 Ener-G Eggs
    2 c. Soy Milk, Plain

    Bowl Three:
    2-3 c. Panko, or other bread crumbs of choice
    Dried seasonings of choice

    1/4 c. oil for cooking

Directions

Patties:
1. Combine dry ingredients.
2. In a separate bowl, combine wet ingredients.
3. Mix the wet and dry ingredients in a large bowl and knead the dough until it becomes spongy and elastic.
4. Pull small chunks off the dough and form them into small flat patties. The texture is pretty odd and stretchy, so this is a difficult task to do.
5. Set aside for 15-20 minutes to set.
6. Add vegetable broth to a large pot and place patties into the broth.
7. Bring broth to a boil, reduce heat, cover and simmer for 90 minutes. Steak patties will expand during this time.
8. Remove steaks from broth and allow to cool completely.
9. Coat steaks in the following order: Flour, Egg, Bread Crumbs
10. Heat oil over medium-high heat.
11. Cook steaks in oil, turning once to evenly cook. Steaks are finished when breading is golden brown.

Serve with mashed potatoes and a creamy vegan gravy.
