Introduction
This is a spicy Latin dish that is wonderful as a filling for burritos or served over rice. You can add your favorite spices. Great when topped with guacamole! Ingredients

1 lb. flank steak
1 T. vegetable oil
1 small onion, sliced thin
1/2 cup sofrito sauce
1 can diced tomatoes (I prefer petite diced)
1 tsp. cumin
1 tsp. oregano
1 tsp. diced jalapeno peppers
Salt and pepper as needed
Directions
Brown the flank steak in a little vegetable oil on both sides for 3-4 minutes. Place in crockpot. Add remaining ingredients. Cook on low for 9-10 hours, or until meat is tender. When done, shred meat with two forks and allow to cook in the sauce for an additional 30 minutes. Serve as burrito filling or over rice.
