Ingredients

6 Cups Broccoli
8 oz Farfalle (Bow Tie Pasta)
2 Tbsp. Unsalted Butter
2 Tbsp. Extra Light Olive Oil
1 Tsp. Minced Garlic
1 Lemon (Zest and Juice)
1/4 C toasted pine nuts
Parmasean cheese, optional (not included in Nutritional information)
Directions
-Cook broccoli for 3 minutes in a large pot of boiling salted water. Remove broccoli with a slotted spoon. Place in a large bowl and set aside.
-In the same water, cook the pasta according to package directions, about 12 minutes. Drain well and add to the broccoli.
-While the pasta is boiling, in a small saute pan, heat the butter and oil and cook the garlic and zest of the lemon over medium-low heat for 1 minute. Off the heat, add 2 tsp. salt, pepper, and 1 Tbsp. lemon juice and pour over broccoli and pasta. Toss well. Season to taste and sprinkle with the toasted pine nuts and optional parm.
*To toast pine nuts, place them in a dry saute pan over medium-low heat, tossing often, for about 5 minutes, until light brown.
