Introduction


Eggcellent use of left over ham. Can make the night before and refrigerate and pop in the oven for a delicous hot breakfast.

Number of Servings: 4

Ingredients

    2 c frozen diced potatoes
    1 c cooked lean ham, diced
    2 green onions, sliced
    1 1/4 c egg substitue
    1/2 c skin milk
    1/2 c reduced-fat cheddar cheese, shredded

Directions

1. preheat oven to 325
2. lightly ocat a 9 x 13 baking dish with cooking spray
3. layer potatoes evenly on the bottom of the dish; top with ham, mushrooms, and onions
4. in a small mixing bowl, beat egg substitue and skim milk with a fork or whisk until well blended.
5. pour egg mixture over ham and veggies in baling dish and top with cheese (says top with cheese but it gets to done for me I wait until last 5 min then put it on)
6.bake until eggs are firm and top is lightly browned, generally 40 min.
7. cut into 4 portions enjoy

    Ohh this sounds sooo good.
    I'm going to try it, but I'm going to cook it in those little aluminum meat pie dishes. This way I can freeze them and use them for a quick breakfast on busy mornings.

    Incredible!
    Great use for ham - I think I will add a little more egg the next time. May try adjusting by adding some peppers and onions just to give it a bit more bulk.

    I baked this at 425 for about 20 minutes just to speed it up a bit!

    This a very easy recipe and is very good . Great idea about freezing pieces to eat a quick breakfast I never thought of this but its a great idea especially if you have kids - 11/11/12
