Introduction

Great snack or can be used as a sandwich if you are on a gluten-free diet like I am! Great snack or can be used as a sandwich if you are on a gluten-free diet like I am!

Ingredients

    Cucumber
    Chicken (canned works great, but can use any leftover chicken)
    Mayo

Directions

Peel cucumber. Slice in half. Using a knife, empty out the 'inside' seeded part of the cucumber. You can eat this separately if you choose or keep it for another snack. In a bowl mix chicken and mayo into a chicken salad type mixture (you can add any seasoning, etc. to this mix that you like- I love to add a little bit of curry powder and some green rasins). Fill cucumber 'boats' with chicken salad mix- Enjoy!! Very quick, nice and crunchy and perfect for a snack!
