Introduction
Tasty and moist turkey meatloaf, very low in fat and fairly low in sodium. You can substitute other vegetables for the onions and/or carrots -- such as zucchini, bell peppers, celery, or baby peas. Ingredients

20 ounce package extra-lean ground turkey
1/2 cup finely chopped onion
1/2 cup grated carrot
1/2 cup low sodium chicken broth
3/4 cup Stove Top Herb Stuffing mix (or favorite flavor)
1 tsp worcestershire sauce
1 tsp garlic powder (NOT salt)
1 large egg
ground black pepper to taste
Directions
Heat oven to 350 degrees.
In a large bowl, combine stuffing mix, worcestershire sauce, and broth, and let set a few minutes while the stuffing crumbs soften. Add the remaining ingredients, with turkey last, and mix until all ingredients are well blended. Don't overmix, or the meatloaf will be too dense.
Form into a 9" x 5" non-stick loaf pan and bake at 350 until meat loaf is firm, about 40 minutes. If using a thermometer, should be at 165 degrees in the middle of the loaf.
If desired, top with 2 TBS BBQ sauce for the last 15 minutes of cooking time. (Not included in nutritional info). Leftovers make great sandwiches.
