Introduction

Ingredients

    2/3 cup butter
    2 cups quick oats
    1 cup granulated sugar
    2/3 cup all-purpose flour
    1/4 cup light or dark corn syrup
    1/4 cup milk
    1 tsp vanilla extract
    1/4 tsp salt
    1 3/4 cups milk chocolate chips

Directions

Preheat oven to 375 degrees F. Line baking sheets with foil.

Melt butter in medium saucepan; remove from heat. Stir in oats, sugar, flour, corn syrup, milk, vanilla extract and salt; mix well. Drop by level teaspoon, about 3 inches apart, onto prepared baking sheets. Spread thinly with rubber spatula.

Bake for 6 to 8 minutes or until golden brown. Cool completely on baking sheets on wire racks. Peel foil from cookies.

Microwave morsels in medium, microwave-safe bowl on Medium-High power for 1 minute; stir. Microwave at addtional 10 to 20 second intervals, stirring until smooth. (OR - melt in pan on stove on medium heat stiring constantly until all melted and smooth.) Spread thin layer of melted chocolate onto flat side of half the cookies. Top with remaining cookies.

Makes about 3 1/2 dozen sandwich cookies.

    This was a tasty recipe. I must have made the sandwiches too big, because I only ended up with about 20, not 42. I am not sure if the calorie levels are for the whole sandwich cookie or for only one side, because they are pretty rich. - 12/4/09

    It is for the whole cookie, yes they are rich. I had to make the two sides really thin, almost like paper so I was able to make 42. I believe the calories are right, I added in all the ingredients and divided it by 42.
