Introduction
This recipe was adapted from a Chelsea Clinton recipe a friend gave me that has TONS more regular sugar and butter. If you modify and use splenda, you can have your sweets and eat them too! Ingredients

5 large sweet potatoes, peeled, cubed & boiled
1/4 cup butter
1/2 cup 1% milk
2/3 cup splenda for baking
1 tsp vanilla extract
1 large egg
1/4 cup splenda brown sugar blend
2 cups mini marshmallows
2 tbsp melted butter
Directions
Mash potatoes and next five ingredients until smooth and creamy (think regular mashed potatoes). Spread into a 13x9" casserole dish.
Mix brown sugar, mini marshmallows, and remaining butter until mallows are pretty coated. Pour over the top of the potato mixture.
Bake at 350 for 20 minutes until potatoes bubble around the sides of the pan.
Goes really well with ham.
