Introduction

My own version with low-fat cheese and egg-beaters substituting for some of the eggs. My own version with low-fat cheese and egg-beaters substituting for some of the eggs.
Number of Servings: 4

Ingredients

    4 eggs
    1/2 cup Egg-beaters
    1/2 cup onion, diced
    1/2 cup red pepper, diced
    1 cup mushroom, diced
    1/2 cup ham, diced
    3 tsp Celeb Light Margarine
    1/4 cup 1% milk

Directions

Saute vegetables and ham in pan. Add eggs scrambled with milk and egg-beaters. Add salt and pepper to taste. Add egg mixture to vegetables and stir in pan. Cook until almost done. Break up cheese slices and spread over top of eggs. Cover and cook 1 minute more. Makes 4 servings.
