Ingredients

    16 oz sweet potato
    8 oz small red potatoes
    6 oz asparagus
    1 small zucchini
    1 lrg red peper
    1/2 pkg firm tofu
    2 tbs pesto sauce

Directions

boil sweet & red potato chunks to parboil
toss together remaining ingredients
bake at 425 for 20 minutes (stir after 10)
