Ingredients

1 package (~500g) ground chicken
Procutio, finely chopped (optional)
1 Zuccini & 4 Mushrooms, thinly sliced
1 jar of PC Blue Menu Tomato/basil sauce
Kamut Lasagna noodles, pre-cooked per the directions on the box
½ package of spinach leaves
Ricotta cheese
1 ball Mozzarella, shredded and divided
handful of fresh basil, finely chopped
1 garlic, minced
1 egg
Romano or Parmasean
Directions
Scramble fry the chicken with a little oil (if necessary to prevent burning). Remove to a bowl
Saute the vegetables together in the drippings
Mix the meats together with the tomato sauce
In a separate bowl, mix the Ricotta, garlic, egg, mozzarella (half) and basil
Layer (noodles, meat, veggies with spinach) and repeat as necessary
Top with remaining cheeses
Bake at 350F for 30 min or until the cheese melts. Serves 9 or 12 depending on how you cut it.
