Ingredients

    Lime Juice, from one lime
    12 oz Flank Steak
    2 garlic Cloves, chopped
    1 cup onion sliced
    1/2 bell pepper sliced
    1 bag cherry tomatoes
    1 tsp olive oil
    4 tbs sour cream
    1 cup shredded low fat cheddar cheese
    4 servings Mission , 8" Low Carb Soft Taco Size Tortilla

Directions

Marinate steak, onion, garlic, peppers, and lime juice together in a zip lock bag for at least an hour (longer is great too). Heat skillet and add 1 tsp olive oil and heat. Add all the contents of the zip lock back to hot skillet and brown meat. Add the tomatoes and cook until meat is done. Top each tortilla with 1 tbsp of low fat sour cream and 1/4 cup of cheese. Then add 3 oz of meat and lots of veggies.

    The high fiber content is from using Mission low-carb tortillas. I use them and they have 11 grams of dietary fiber (just checked the fridge). - 6/8/12

    I agree, looking at the ingredients there is no way that the fiber content could be 12, what is the calculation based on????????? - 2/13/12

    I'm confused about how much fiber this recipe is claiming to have...I haven't made it, but looking at what is listed as the ingredients there is no way there is 12 grams of fiber...? Are the tortillas super high fiber? - 7/10/10

    Very Good
    I used some left over round steak that I had cooked in the crock pot, skipped the lime juice. This recipe was awesome, everyone in the family loved it. - 2/2/10

    I really enjoyed these & even my hubby who doesn't like limes said they were good. I also love how EASY they are to do. We will definitely have these again. - 7/20/09
