Ingredients

Banana, fresh, 3 cup, mashed
Light margarine, 2 tbsp
Egg, fresh, 2 large
Brown Sugar, 1.5 cup, NOT PACKED
Baking Powder, 3 tsp
Baking Soda, 1 tsp
Salt, 1 tsp
*Whole Wheat Flour, 2 cup
Vanilla Extract, 1 tbsp
Directions
Heat oven to 325. Grease two 8 x 4 loaf pans. Mix brown sugar and margarine. Add eggs, vanilla and mashed bananas. Dump lightly scooped whole wheat flour, baking powder & soda and salt into wet ingredients without stirring. Stir 10 times, just enough to incorporate the dry ingredients. May look lumpy, but that is okay. Pour into loaf pans and tap pans to settle. Place in oven and bake, checking after 50 min, and every 10 min after that for doneness.
