Introduction

I call this Catalina stir fry because that's what the original recipe was called, as I got this recipe from a Kraft magazine and it called for Catalina salad dressing, but I prefer the Wishbone Western dressing. Ingredients

    1/4 c. Wishbone Western salad dressing
    1 T soy sauce
    1/4 t. garlic powder
    3 oz. chicken breast, boneless, skinless, cubed
    1/4 pkg (10 oz) mixed vegetables
    1/2 c. white rice

Directions

In medium sized skillet, combine salad dressing, soy sauce, and garlic powder. Heat over medium heat until simmering, then add chicken. Cook until chicken is cooked through. Add mixed vegetables. Cover and cook until vegetables are cooked, stirring occasionally. Serve over white rice.

1 Hardy serving (serves 2 easily if served with a nice salad or other side)

    Incredible!
    I make this with Catalina dressing, but no garlic powder and I love it! My fave veggies to put in are cauliflower, broccoli, bell peppers, and carrots. I also put in two chicken breasts and 2 full cups of veg and make it into 4 servings with 1 cup cooked brown rice each-less calories per serving. - 7/11/09
