Introduction

Number of Servings: 6

Ingredients

    2 full boneless/skinless Chicken Breasts
    2 green bell peppers (bell peppers); sliced
    1 red bell pepper; sliced
    1 onions; sliced
    1 box Fat-Free Cream Cheese; cubed
    6 Carb Balance Fajita size flour tortillas; warmed

Directions

Place chicken in bottom of crockpot; top with bell peppers and onions. Cover and cook through.

Once chicken is cooked through, shred it with a couple forks, return to crock and add cubed cream cheese.

When cream cheese has melted, serve in warmed Carb Balance Fajita size flour tortillas

    Do you place any liquid in with the chicken? - 5/16/09

    I don't recall adding any liquid but I might just try adding a bit of broth next time. The cream cheese melts down to a rich/creamy sauce but it IS still "thick" so if you plan to serve it with pasta instead of tortillas, you might want to go ahead and add some fat-free chicken broth or something.

    How long must you cook this? On low or high? It seems like if you dont add any liquid the chicken will burn. - 9/14/09
