Introduction
This dish is soooooooooo easy to make and is very quick too. The hot smoked salmon is super tasty and the new potatoes are amazing with the spring vegetables of green beans and spring onions. If you like you can add a tbsp of creme fraiche to the mix too. I serve this with baby beetroot and salad. Delicious!! This dish is soooooooooo easy to make and is very quick too. Ingredients

10 baby new potatoes
150g green beans
170g hot smoked salmon
4 spring onions
Salt and pepper
Directions
Serves 2.
1. Put new potatoes on to boil for 20mins.
2. Meanwhile top and tail the green beans and place in a microwavable container with 3-4 tbsps water.
3. Top and tail spring onions and chop.
4. When the potatoes haven been on for 14mins put the green beans in the microwave for 4mins (based on 850w oven - alter accordingly).
5. Once the beans have cooked leave to rest and microwave the salmon for 1.5mins. Take out and flake with a fork.
6. Drain the potatoes and using a large sharp knife slice them into rough pieces.
7. Slice the beans into smaller pieces and add to potatoes with flaked salmon and spring onions. Season with salt and pepper.
8. Serve immediately.
