Ingredients

    1 cup Buckwheat flour
    1 cup mashed bananas, approx. 2 med.
    3 Tbsp. baking powder
    1/2 tsp. baking soda
    1 tsp. white vinegar
    1 egg
    1/4 cup packed brown sugar
    4 Tbsp. Chocolate Chips

Directions

In a bowl, mash banana, spinkle with the baking soda and then the vinegar and stir. Add the egg and stir again. Set aside.
In a larger bowl, mix flour, baking powder, sugar and chocolate chips, stir.
Pour the banana mixture on to the dry ingredients and stir until just blended.
Evenly distribute the batter into 12 greased muffin cups.
Bake at 350 F. for 15 minutes.
Allow to cool before removing from tin. Enjoy!
