Ingredients

    1 package (5 links) Turkey Mild or Hot Italian Sausages
    4 whole red, yellow, orange, or green peppers (or 1 of each), sliced
    1 box couscous
    Olive oil spray
    5 sprays I Can't Believe It's Not Butter
    Salt and Pepper to taste

Directions

Place the turkey sausages in a non-stick skillet (or on a grill) and cook over medium heat on all sides until no longer pink in the center (approximately 20 minutes). While the sausage is cooking, prepare the couscous as indicated on the package (typically it calls for bringing 2 cups of water to a boil, turning off the heat, pouring in a box of couscous, and covering for 5 minutes). Slice the peppers into strips. Spray another skillet with olive oil and over low to medium heat saute the peppers until they are cooked, but still a little crisp.

Place 1/2 cup of cooked couscous on your plate and spray with 5 sprays of I Can't Believe It's Not Butter. Lay a turkey sausage on the couscous and top with 1/5th of the cooked peppers. Add salt and pepper to taste and enjoy!

    Very Good
    I really liked the peppers and swapped some of the milder peppers with a boder, hotter pepper. The couscous was a welcome change from pasta...thumbs up :) - 8/28/11

    I will definitely try this with couscous as I do something similar with brown rice. I saute garlic, onions and peppers in olive oil until soft, add sun-dried tomatoes and top the rice with the sausage, sauteed veggies and feta cheese (or parmesan) - 12/4/10

    Turkey Sausage on Couscous was very tasty. I just made it with red peppers since my dh can't handle the green ones. I would definitely make again since it was so easy! - 8/4/08
