Ingredients

Multigrain Penne Pasta (I used Market Pantry, you can use any kind)
1 jar Classico Roasted Garlic Alfredo
    1 pkg frozen chopped spinach
7 oz diced or sliced chicken breast, grilled
1 c milk (or to taste)

Directions

I use frozen chicken breasts, but if you are grilling fresh chicken, prepare it first and set aside.

Prepare pasta according to package directions.

While water is heating, thaw spinach in microwave. Meanwhile, empty jar of alfredo sauce into a medium saucepan and heat over medium heat. When spinach is done, drain and add to alfredo sauce. Add chicken and milk to desired thickness. When pasta is done, drain and pour sauce over. Makes about 6 servings for an entree or 12+ for a side dish.

This recipe was very good. For my own taste, I used a Pam spray and added a little more garlic to the chicken while cooking, and a pinch of freshly ground nutmeg to the sauce. Once ready to serve I sprinkled with parmesan cheese at the table ( about 2 tablespoons.) - 9/7/09
