    1/8 cup onion, diced
    1/4 cup red & yellow bell peppers, chopped
    1/8 cup tomato, diced
    1 egg, large

Directions

Heat pan w/olive oil
Add onions, peppers, & tomato. Saute until cooked through
Add egg, mix ingredients.
Cook egg thoroughly.
