Introduction

Atkins Induction friendly, my version of Low carb! Spinach as posted by SLOWSET, using fresh rather than frozen spinach. The spinach is already net carbs - so do not subtract the fibre from the carb total if doing atkins - whole recipe is about 4.5 net carbs. Atkins Induction friendly, my version of Low carb! Ingredients

    Fresh Spinach, 105 grams
    Eggs, 4 large
    Garlic, 1 clove, crushed
    salt and pepper to taste
    Cheddar cheese, 55 grams

Directions

Line bread loaf tray with parchment paper (could take a bit of folding). Fill loaf pan with fresh spinach. Beat four eggs in medium bowl. Crush garlic and add to eggs. Add salt and pepper to eggs. Push spinach down as much as possible in loaf pan. Pour egg mixture over spinach evenly. Cover as much as possible with grated cheese. Bake in 350 degree oven for 12-14 minutes. Cool and slice to serve.
