Ingredients

    10 oz frozen, chopped spinach, thawed
    3 cups cooked brown rice
    2 cups low-fat cottage cheese
    1 large egg
    1 T all-purpose flour
    1 T grated Parmesan cheese
    1/2 t dried thyme
    pepper to taste
    1 t light tub margarine
    2 medium onions, chopped
    3 medium garlic cloves, minced
    8 oz, button mushrooms, sliced
    3 T grated Parmesan cheese
    2 T sunflower seeds

Directions

Preheat oven to 375 degrees. Spray a 9X13 pan with non-stick spray. Squeeze moisture from thawed spinach. In a large bowl, stir together rice, cottage cheese, egg, flour, 1 tablespoon Parmesan, thyme and pepper. In a large saucepan, melt the margarine. Cook onions and garlic until soft. Reduce heat to low; stir in spinach and mushrooms, Cook, covered, for 3-5 minutes. Stir in cottage cheese mixture. Spoon into the prepared pan. Sprinkle with remaining 3 tablespoons Parmesan and sunflower seeds. Bake, uncovered, for 25-30 minutes. Makes 8 servings.
