Introduction

Breakfast for dinner, baby! Or any time. Can be made without meat/cheese, and will be fewer calories. I would also prefer to use egg substitute when possible. Breakfast for dinner, baby! Or any time. Ingredients

    One onion, chopped
    About six large mushrooms, chopped
    Three small potatoes, chopped
    Minced garlic to preference
    Two sausages (the ones I use are cheese sausages, 110 cal each), sliced
    1 1/2 cup egg substitute, or three eggs and four egg whites
    1 tbsp olive oil
    3 slices Kraft Singles

Directions

Start by heating oil in large skillet. Cook the potatoes until they are mostly done, then add the onions, mushrooms, garlic, and sausage. Cook until veggies and sausage are done, then pour beaten egg/egg whites over. Allow eggs to cook, then turn off heat and lay cheese slices on top to melt.

Serving is one quarter of the pan.
