Introduction

This is high in healthy fats. It's an amazingly tasty snack. I often use the Rosemary Bread from Costco if I can find it as it makes the prep easier, but you can follow the recipe for the bread otherwise.

Ingredients

    Bread:
    8 slices Italian Bread
    2 tbsp Fresh Rosemary
    1 tsp Garlic Powder
    Olive OIl Spray

    Topping:
    8 slices Fresh Mozzarella
    1 Medium Tomato
    2 tbsp Fresh Basil
    Pinch of Salt

    Vinegrette:
    3 tbsp Balsamic Vinegar
    1/4 cup Extra Virgin Olive Oil
    1 tsp Dijon Mustard
    1/4 tsp Salt
    1/4 tsp Fresh Ground Pepper

Directions

Preheat the Broiler. Cut the Bread into eight slices about 1/2 inch thick. Cut each slice into 4 1/4 inch slices. Spray with Olive oil Spray. Finely chop rosemary. Sprinkle with Garlic Powder and Rosemary. Toast under the broiler until golden brown, about 3-4 minutes.

Thinly slice Tomatoes into small pieces to fit on bread. Slice Mozzarella in same fashion. Chop basil into small pieces.

Combine ingredients for vinegrette and whisk until oil and vinegar are emulsified.

Top bread with tomato, mozzarella and basil. Spoon a small amount of vinegrette on to the top and enjoy.
