Ingredients

    1.5 cup Quaker unprocessed bran
    .75 cup whole wheat flour
    .5 cup sugar
    1 T. baking powder
    .75 t. cinnamon
    .5 t. salt
    .75 cup canned pumpkin (applesauce can be substituted)
    .25 cup simply smart fat free milk
    2 egg whites
    2 T. smart balance omega oil

Directions

Mix all ingredients together. Pour into 12 lined muffin cups. Bake in a 400 degree oven for 18 to 20 minutes.
