Introduction

Great simple homemade marinara sauce with boneless/skinless chicken thighs instead of ground beef. The thighs add much more flavor instead of using chicken breasts. Ingredients

    1 large (about 15 oz) can Crushed tomatoes
    1 onion (peeled and diced)
    1 clove garlic
    1 tbsp. olive oil
    1/2 cup chicken broth (or white wine for added flavor)
    about 4-5 boneless/skinless chicken thighs chopped up in small pieces
    1 tsp. salt
    1/2 tsp. ground black pepper
    pinch of sugar (to cut down acidity of tomatos)
    basil and oregano to taste (or other itilian spices you like to use)
    1 12oz pkg of linguine

Directions

chop the chicken thighs until small pieces and brown in olive oil. Remove and set aside.
Add the onions and garlic and saute until soft.
Add the chicken broth (or wine) and reduce by half.
Add the can of crushed tomatoes and add salt, pepper and a pinch of sugar (to cut down acidity of tomatos) and let simmer for about 30 minutes.
After simmering add the chicken thighs back to the sauce and let simmer again for another 15 minutes.
Serve over al dente linguine and top with parmesean cheese.
