Ingredients

1/2 tsp - Vegetable Oil
2 tbsp - Chopped raw onion
1.5 tbsp - Diced jalapeño peppers (can use sliced)
2 - Large eggs
1 tbsp - Fat free milk
Salt
Pepper
1/4 cup - Shredded cheese
4 slices - Mrs. Baird's 100% Whole Wheat Bread
Directions
Makes 2 sandwiches.
In small bowl or measuring cup, mix the eggs, milk, salt and pepper. Be sure to break the yolks. Set aside.
In a small skillet, pour in oil (enough to coat the bottom). Heat oil, then add onions. Sauté onions until browned. Add jalapeños (if using sliced, then use spatula to cut jalapeños into smaller sections).
Pour in the egg mixture. Stir constantly until eggs are cooked.
Add the cheese. Mix ingredients throughly.
Serve omelette on bread as a sandwich.
