Ingredients

165 grams brie
1/2 tbsp olive oil
1/2 tbsp spicy dijon mustard
1/2 tbsp lime or lemon juice
2 cloves garlic, crushed
1/2 to 1 tbsp black pepper (to your taste)
1/3 tbsp dried cilantro (or 1 tbsp fresh parsley)
1/4 red or orange bell pepper
Directions
1. Mince the pepper very finely. Mix it with the olive oil, mustard, lemon juice, garlic, pepper, and cilantro.
2. Pierce the top of the brie repeatedly with a fork - it should resemble havarti when you're done. Wrap the cheese in tinfoil, leaving an opening for step 3.
3. Pour the marinade over the brie and close the foil. Put it in the fridge and let it marinade for at least 2 hours - overnight is even better.
4. Place the brie (still in the tinfoil) on a baking pan and bake at 350F for 20 minutes or until it starts to sizzle.
5. Remove the brie from the oven and open the tinfoil (careful it is HOT). Serve immediately. Very good served with slices of fresh bauguette.
