Introduction

Number of Servings: 6

Ingredients

    370 grams whole wheat pasta (bow-tie is nice)
    1 large bunch fresh asparagus
    1 package fresh baby carrots (about 2 cups)
    1/2 cup red onion, chopped
    3/4 cup lite whipped salad dressing
    1/4 cup fat-free milk
    1 clove garlic, minced or pressed
    2 tsp granulated sugar

Directions

1. Bring a large pasta pot of water to boil.
2. Cook Whole Wheat Pasta according to package directions.
3. Meanwhile, wash and cut asparagus into pieces about 2 inches long.
4. Mix whipped dressing, milk, garlic, and sugar and set aside.
5. When pasta is cooked, remove pasta from pot, and add baby carrots to same pot. (A pasta pot with a strainer is great for this) Cook carrots about 4 minutes.
6. Add asparagus to pot. Cook about 4 minutes more.
7. Return pasta to strainer, and rinse pasta, carrots and asparagus with cold water to cool them.
8. Transfer pasta, asparagus, and carrots to a large bowl. Add whipped dressing mix and red onions. Mix well.
