Number of Servings: 4

Ingredients

    1/2 lb ground turkey
    1/4 cup onion chopped
    1/2 cup salsa
    1/2 can of black beans
    1/8 cup lite Italian dressing
    1 tbsp taco seasoning
    1/8 tsp ground cumin
    2 flour tortillias (8 inch) (I used whole wheat low carb tortillas)
    1/2 cup reduced fat sour cream
    1 cup shredded cheddar cheese
    1 cup shredded lettuce
    minced fresh cilantro to your liking
    chopped tomato to your liking

Directions

1. In a large skillet cook turkey and onion over medium heat until meat is no longer pink. Drain if needed. Stir in salsa, beans, dressing, taco seasoning and cumin. Place on tortilla in a greased 8 x 8 cooking dish. Layer with half of the meat mixture, sour cream and cheese. Repeat layers.

2. Bake at 400 degrees for 20 - 25 minutes. Let stand for 5 minutes before topping with shredded lettuce, diced tomates and cilantro.
