Introduction

A healthy version of chicken fingers, very yummy. Very simple and easy to make. A healthy version of chicken fingers, very yummy. Very simple and easy to make.
Number of Servings: 4

Ingredients

    2 Chix breasts, bone and skin removed, cut into strips

    .5 cup Italian style progresso bread crumbs

    .5 cup (8 tbsp)Fat free italian salad dressing

    1 tbsp of olive oil


Directions

4 servings. About 5 pieces per serving, depending on how thick you cut your strips, your serving should equal half a chicken breast.


Pound out and cut off fat on the chicken if not already done.
Cut chicken breast into strips. ( I usually halve the breast first, than cut eat half into 5 strips about .5- 1 inches wide)
Pour bread crumbs into a med size bowl or Plastic resealable bag
Brush chicken breasts with equal amount of italian dressing. (I like to let it marinate for awhile)
Then put strips in bowl, toss to coat evenly, if using a bag, shake to coat.
Brush olive oil on the bottom of a baking sheet, (i like to use a cookie sheet or shallow baking pan).

Put strips in single layer bake in the oven @350 degrees F, for 16 minutes, or until golden brown and juices run clear, turning about half way through.

    I omitted the bread crumbs just because I did not have any. I marinated my chicken overnight in a ziplock bag; placed chicken on baking rack. - 8/1/09

    Fantastic! I didn't have the dressing either, so we used Egg Beaters instead. Yum! With a little buffalo sauce, it was like a super-healthy boneless buffalo wing. - 9/19/10

    I can make bread crumbs but don't usually have the italian dressing. Perhaps the vinigarette would work and give it a different flavor. I may just go out and buy some. Sounds really good and quick. - 8/1/09

    Doing without the bread crumbs makes it great too with adding a bit of chili powder - 7/12/19
