Introduction

A fresh and filling lunch or picnic/potluck option. A fresh and filling lunch or picnic/potluck option.
Number of Servings: 10

Ingredients

    1 box of whole wheat or protein packed rotini pasta
    1 bag of organic baby carrots, chopped
    1 bunch of organic celery, chopped
    2 large organic red bell peppers, chopped
    1 package of organic cherry tomatoes, halved
    1 large red onion, chopped
    1 bag organic broccoli, coarsely chopped
    1/2 jar of olives (any variety, pitted)
    1/2 bottle of light italian dressing
    2 quick shakes of fresh parmesan cheese

    Optional add in: artichoke hearts

Directions

Follow directions on pasta package to cook pasta. Chop veggies and toss with pasta in a large bowl (or two). Add dressing and parmesan and toss again. Refrigerate at least 1 hour before serving.
