Introduction

Ingredients

    5 light servings in this recipe
    Refrigerated pizza dough
    12 raw shrimp (35-40 count per pound)
    Half a vidalia onion, thinly sliced
    1 large red bell pepper
    1 garlic clove
    3 TBS EV olive oil, divided
    5.3 oz package of Chavrie goat's milk cheese - recipe uses about 2/3 the package
    Handfull of basil, chiffonade (rolled up and sliced like ribbons)

Directions

Place red bell under broiler to char. Check every couple of minutes and keep turning until its completely black. Remove and put in a zip-loc bag to steam the skin off for about 5-10 minutes. Mindful of the temperature of the pepper, remove the skin, stem, and seeds. Slice thinly.

While pepper is roasting, heat 1-2 TBS extra virgin olive oil in skillet, add garlic and sliced onion. Saute to translucent.

Add shrimp and cook ~ 3 minutes until done. Remove from heat and stir 2-3 TBS of basil ribbons into mixture and set aside.

Spray cookie sheet with non-stick and spread dough on cookie sheet (and bake recommended time PLAIN.

Remove, brush with olive oil, drop large teaspoons of Chavire all over crust, string out sliced roated red pepper and onion-garlic-shrimp-basil mixture.

Bake another 10 minutes at 400 to heat throughout and serve.
