Number of Servings: 4

1 lb Boneless, Skinless Chicken Breast Halves
    Salt and Pepper to taste
    1 Tbl Olive oil
1 can (4-4.5 oz) Diced Green Chiles
1 cup Grape Tomatoes (cut in half)
    3/4 cup chicken broth
    1/2 tsp cumin
    1 clove garlic
    2 tbl Chopped fresh cilantro

1) Place chicken breast halves between 2 sheets of plastic wrap. With mallet or rolling pin, pound breasts to 1/2 inch thickness. Sprinkle with salt and pepper to taste.

2) In nonstick skillet, heat oil over medium high heat until hot. Add breasts and cook 6-7 min. or until browned on both sides and chicken loses its pink color through out, turning once. Transfer breasts to platter and cover with foil to keep warm.

3) To skillet, add green chiles, grape tomatoes, chicken broth, ground cumin, garlic, and any juices from chicken platter. Cook 3 min to reduce sauce slightly, stirring occasionally. Stir in cilantro.
