Introduction

In honor of Cinco de Mayo I created this breakfast tostada. "Fry" your egg in non-stick spray or scramble it if you want. Ingredients

    1 corn tortilla
    1/4 cup black beans
    1 T salsa
    1 egg
    Nonstick spray

Directions

Place corn tortilla on a plate and top with black beans and salsa. Warm up in microwave for 20 seconds.

Cook egg in pan and place cooked egg on top of tortilla bean mixture. Enjoy!
