Introduction
This is a healthier version of the Cowboy Pockets that my mother and I love. We both came up with the recipe and think it is just as good as the original (and better for you by far!) Ingredients

1 can Mexican Style Chili Beans (15 ounces)
1 can Great Northern Beans (15.8 ounces), rinsed
1 teaspoon (or dash) cumin
1 pound Ground Turkey (93% lean)
1/4 cup chopped red pepper
1 1/2 tablespoons canned green chilies
2 tablespoons chicken taco seasoning
4 thick slices of sweet onion
2 tablespoons taco sauce
Directions
Combine Mexican beans, great northern beans, and cumin. Combine turkey through taco seasoning and shape into four patties.
On four double thickness aluminum foil squares (about 12" X12"), place slice of onion, turkey patty and then brush with taco sauce. Place 1/3 cup of beans on top. Wrap aluminum foil into packets to seal.
Bake at in 375 degree oven (or grill) for 45 minutes or until internal temperature of turkey is 170 degrees.
Note: You will have leftover beans to warm separately and serve on the side.
