definatly comfort food....you could make it "healthy" (or healthier) by switching to low fat or non fat cheeses/dressing....

Ingredients

    *Olive Oil, 2 tbsp
    *Mueller's Small Sea Shells, 16 oz box
    *Garlic, 2 tsp (more or less to taste)
    *Hot Water, 4 cups

    *shredded Monterey Jack Cheese, 1 cup
    *Meijer Gold Chunky Blue Cheese Salad Dressing, 0.5 cup
    *Kraft Natural Cheese Crumbles: Blue Cheese, 8 tbsp

    *Green Onions, 2 chopped (more or less to taste)

Directions

I'm not good at dividing into steps...sorry!

Use a large frying pan or a wok. Put empty pan on medium/high heat, add olive oil and garlic. (You could also add onion flakes or fresh diced onion if you like.) Add uncooked pasta and saute for a few minutes (like you would Rice-a-Roni) until pasta is lightly browned, then add water slowly and bring to a boil. Lower heat as needed to keep pasta from burning to the pan. Most of the water should be absorbed after 8 -10 minutes. DO NOT DRAIN THE PASTA! Add in your cheeses and dressing and stir well. Once the cheeses are all melted and blended through, put in serving dish if desired and garnish with fresh chopped green onion.

Makes 8 servings, about 1 cup each.

    Very Good
    I made some substitutions based on what I had at home (Mozzarella instead of Mont. Jack, peas instead of green onions, etc) but it turned out well! Interesting variation on normal mac & cheese. - 6/6/09
