Ingredients

    1 1/2 cups frozen shelled edamame
    1 Tbs Canola oli
    1/2 cup chopped red pepper
    1/4 cup chopped onion
    2 cloves garlic, minced
    2 cups fresh corn, about 4 ears
    3 Tbs dry white wine
    2 Tbs rice vinegar
    2 Tbs chopped Fresh Parsley
    2 Tbs chopped Fresh Basil (I used Cilantro)
    1/2 tsp salt

Tips

I had a similar salad from Fresh Market and loved it. I did an internet search to find a recipe that was close. This is a combination of a few different ones that I found on line. Yummy!


Directions

Cook edamame in a large saucepan until tender, about 4 minutes.
Combine edamame and all other ingredients.
Cover and refrigerate for at least 2 hours to let flavors blend.
Serve chilled.

    Great flavor and easy. My family doesn't like onion so I would reduce that. I also cut the oil in 1/2 and substituted water for the white wine. - 2/20/10
