Ingredients

10 cups shredded cabbage (approximately 2 medium heads/3 lbs)
    8 slices bacon, diced
    1/2 cup packed brown sugar
    1/4 cup all-purpose flour
    1 cup water
    1/2 cup vinegar
    2 tsp salt
    1/4 tsp pepper
    2 small onions, sliced

Tips

Garnish with additional crisply cooked diced bacon, if desired (not included in nutrition facts).

Directions

Prepare and cook 10 cups shredded cabbage as follows:
1. Heat 1/2 inch salted water (1/2 tsp salt to 1 cup water) to boiling.
2. Add red cabbage and 2 tbsp vinegar or lemon juice.
3. Cover and heat to boiling; reduce heat.
4. Boil shredded cabbage 5-8 minutes; drain.

Next, cook bacon, stirring occasionally, until crisp; drain. Drain fat from skillet, reserving 2 tbsp of fat. Stir brown sugar and flour into fat in skillet. Stir in water, vinegar, salt, pepper, and onion. Cook, stirring frequently, until mixture thickens, about 5 minutes.

Finally, stir bacon and sauce mixture into hot cabbage in saucepan; heat through.
