Introduction

This is similar to a few others' pumpkin pancakes, except mine uses just regular ol' pancake mix (the "just add water" kind) This is similar to a few others' pumpkin pancakes, except mine uses just regular ol' pancake mix (the "just add water" kind)

Ingredients

    4 oz canned pumpkin
    1 2/3 cup pancake mix
    1 cup organic vanilla soymilk
    1 tbsp pumpkin pie spice
    4 oz water

Directions

Mix canned pumpkin, pancake mix, soy milk and pumpkin pie spice

Add water as desired into above mixture (depending on how thick or thin you like your pancakes; more water will lead to thinner pancakes)

Drop by tablespoon onto non-stick skillet (using a non-stick skillet eliminates the need for butter or oil); skillet should be over medium-low heat

Use tablespoon to "spread" pancake mixture in pan.

Flip pancake after about a minute or two

makes 5 4.5 inch pancakes
