Introduction
This comes together pretty quickly and makes great take-along lunches for the work week. My son and I threw this together one evening when we were short on ingredients and it was too late to go to the store. The recipe is in its simplest form; however, seasonal vegetables can be added as desired. Great paired with a mixed greens and veggie salad. Ingredients

Boneless, skinless chicken breast (1/2 split), cut into bite-size pieces
1/4 cup white wine (optional)
1/2 cup chopped onion
1 stalk celery, sliced
1 clove garlic, minced
dash of cayenne pepper (optional)
1/2 teaspoon dried oregano leaves
2 cups water
1 box POMI chopped tomatoes (750 grams)
12 ounce Barilla Plus penne
3 cups fresh spinach, coarsely chopped
Directions
Heat a heavy, non-stick skillet over medium-high heat, or use an electric skillet set to 400.
Add chicken and saute until cooked through. Add wine (or substitute a 1/4 cup water or chicken stock), onion, celery and garlic. Continue cooking until vegetables are soft.
Add water, tomatoes, cayenne and oregano, stirring until well mixed. Heat until bubbling then add penne. Stir to combine, place spinach on top and cover with lid. Cook for 12-15 minutes, stirring once or twice. Add more water if necessary. When pasta is cooked it's ready to serve.
